Why a gas ticket matters on a kitchen call
A great many "appliance" failures in a commercial kitchen are not appliance failures. A fryer that will not hold flame, two pieces of equipment that will not run at once, or a range that performs fine in the morning and poorly at service are classic symptoms of a gas supply that is undersized for the equipment now installed — something that creeps up on a kitchen as it adds a piece at a time over the years.
An appliance technician without a gas ticket can replace parts on that fryer indefinitely and never fix it. Gas safety
If you smell gas in the kitchen, shut the equipment off at the appliance valve and ventilate the space. If the smell is strong, evacuate and call FortisBC at 1-800-663-9911 first, then call us. Do not operate switches or equipment while a strong gas smell is present.

Common questions
Why will my commercial fryer or range not light?
Common causes are a failed igniter, thermocouple or flame sensor, a safety valve that has shut the appliance down, a dirty pilot assembly, or a gas supply problem such as low pressure, a partly closed valve or a regulator fault. The last of those is a gas fitting issue rather than an appliance issue, which is why it is worth having a licensed gas fitter on the call.
Do you repair any brand of commercial cooking equipment?
Yes. Waywest services commercial cooking equipment from any manufacturer, so a kitchen running a mix of brands needs one service company rather than several.
Can you convert equipment between natural gas and propane?
Yes, where the manufacturer supplies a conversion kit for that model. Conversion changes orifices and regulator settings and must be done by a licensed gas fitter — it is not a field adjustment. Waywest also handles full propane systems for sites off the gas main.
Do you install new commercial kitchen equipment?
Yes. Waywest handles gas supply and sizing, connections and quick-disconnects, hoods and make-up air coordination, water and drainage, and commissioning. On a new kitchen or a tenant improvement we work from drawings with the general contractor.
My oven is cooking unevenly or will not hold temperature. Is that worth repairing?
Usually yes. Thermostats, thermocouples, controls, convection motors, door gaskets and hinges, and burner adjustment are all routine repairs, and uneven cooking is more often a door seal or a fan than a dead oven. If the cavity or frame has failed, replacement is the honest answer and we will say so.
